DESCRIPTION: The course was focused on really two constituencies.
0:05 One of them was a talented cellar rat -
0:11 Maybe a guy who started off being part of the grape picking crew, but he was the hard worker and the smart guy and so they kept him around and they put him to work dragging hoses full time in the cellar,
0:25 and then over the course of time he worked his way up. Maybe 10 years later, he's the assistant winemaker.
0:33 But he's never had a formal education and he doesn't really know his way around pH and TA and SO2 and all that stuff.
0:44 And so this course was designed to help that person.

0:58 A woman who's been working in the lab at Robert Mondavi for 20 years cranking out pHs and TAs and SO2s,
1:08 but nobody ever told her what the numbers mean or how to use them to actually make wine.
