DESCRIPTION: Purpose of the Course
I've been teaching this course since 1984, and I've taught it 4-6 times a year over the course of that time, all over the country (USA).&nbsp; I've put about 4,500 winemakers through this class, and mostly they like it.
I was an enology student at UC Davis from 1980 to 1983 and during that time a guy named Jim Lapsley who was running the Viticulture and Enology part of the U.C. Davis Cooperative Extension got hold of me and asked my help in coordinating some short courses.
So I did one on refrigeration and I did one on sparkling wine production, working with other people and just kind of being the impresario.
And then in 1984, when I left the University and went to work at R.H. Phillips, I got hold of Jim and I said, well now you owe me, and I want to do the course that I want to design, and what it's about is the problem that almost everybody that gets into winemaking does it as a second career.
