What I hear all the time is that people don't have time to cook. In 1994 I had a wonderful woman that came to me for privates. And she was the CEO of 800 stores. And she said, Dee, I'm fat, because I eat junk. And I said, but you're smart. Why do we eat junk?
I'm over scheduled, overworked, over committed. I have all the overs and it haunted me. And I decided I was going to write a book. And I called it kitchen Express. Good food fast forward. real people with real lives.
The 10 minute mail deal. It took me two and a half years was one of the hardest things I ever did because I wanted everything to taste so good. And I wanted it to be quick and I wanted it to be healthy people. Your body is the only home you will ever live in. It's your personal responsibility to take care of it. I don't have time to cook so what I developed is a cook and freeze technique.
I have enough meals in my freezer for six months. One of my favorite recipes in this book is chicken chili. I hate to tell you this, but it's addictive and it calls for a gallon. So I think two gallons. If I'm cooking already, I double everything and then I freeze. So I'm home free for months and months with healthy meals.
