Either Scott Mary Kay and in today's video I want to show you a really lovely Italian dish very simple Italian dish called tortellini in brodo. Now you may have heard of tortellini, which is this is totally in here actually, they're like small little filled pastors that you can get with like veal and chicken, and vegetables, cheese, all sorts of things fillings you get in these and really, really useful buy them from the supermarket. And sometimes you get them in the freezer section, sometimes in the just the cold section as well, but very, very useful. So I was buying a packet there about five 600 grams in a packet and keep them in the freezer. And then when you need them, you can quickly pull them out and then use the cook them up. Now.

This particular dish is actually a dish that I got from a friend of mine who's also a chef that he cooks for his kids. And you know when he doesn't feel like cooking much and he needs to feed all the family really Really quickly and really, really super dish because it involves very, very little chopping of vegetables or none at all in fact, and all it is is tortellini in brodo. So in a broth so we're going to cook this this we've got 600 grams of tortellini here, you're gonna cook this 600 grams of tortellini, not in boiling water, but actually in chicken stock or pre made or vegetable stock. If you've got fresh chicken stock, that's great or French vegetable stock, fantastic. Most of the time we don't. So I've made up two and a half liters of stock got one and a half liter in this pot already.

And just by using, you know, some packet stock powder here, so we're going to put two and a half liters of this stock in here and turn the heat on because we want to bring it to the boil and then very, very simply What we do is we put our tortellini in our boiling stock together with two cups of when I say cup I mean about the size of a cup, I really teacup are about 500 grams of frozen mixed vegetables, you know those frozen mixed vegetables you get in the freezer section, the supermarket corn, peas, potato, carrot, that kind of thing. So all of that goes into the boiling stock. We bought it for anywhere between like seven to 10 minutes depending on how much you like to total any cooked. And then pretty much that it's ready. And all you do then is take a label and then lady out into into a lock into a soup bowl.

Great job with some parmesan cheese which I've got here and sprinkle it with some parsley. I'm gonna put some parsley in the in the broth anyway. And then that's it really, really quick. And it's one of those great dishes because pretty much it'll take you 15 to 20 minutes. Stop To finish to cook this. So what I'll do now is we've got the stock coming up to heat now.

And as soon as that's come up to boil, we'll put all the ingredients in and start cooking it. So come closer and I'll show you how we do that. Our slugs come to the boil now. So whoa let's turn into boarding pretty fiercely now. So we've got two and a half liters of chicken stock in here that I made with some chicken stock powder have gotten here. This is 600 grams of tortellini.

Just carefully put that in the water very carefully. It's in here. It's one side. Here's our frozen mixed vegetables, two cups. Straight from the freezer like I weigh in give out a stir. Fry this.

Put the lid back on. And we bring this to the boil back to the boil and then we'll boil it for between seven to 10 minutes depending on how you like your pasta cooked totally nice come to the boil. Now we'll just do is just take your lid off to one side and give you tortellini is stir and as it's boiling, just push it down into the liquid. Otherwise it can can float. I'm not caught properly and we're going to boil this down but I'm gonna I'm gonna check this after about seven minutes here what it's like and I might need a little bit more cooking just Do the same thing. Just check it after about seven minutes depending on how you like your pasta cooked.

Well tortellini has been balling now for seven minutes. So what I'm going to do is just take, take one out together with a little bit of the broth in there, and just try it. Let's try the broth for seasoning. That's, that's, that's cool. That's nice. It's very nice to date.

And I just tested chortling to see if it's gone up a little bit more. Well, the main thing it's um, different kinds of pastas cook different right so i mean different brands. So you can have some pasta that cooks in like three or four minutes and others that can get like 1012, sometimes longer, even fresh pasta. Always got a little bit of salt and pepper to this as well. Always taste as you go. Because then you could adjust your seasoning as well.

The salt and pepper now I'm not taught so they need to cook now I think. So come on back, have a look at it. I'm just going to add some parsley, and then we can serve it. Here's our tortellini. Now you can see it's nice and nice and soft and squishy. So let's just turn that off.

I've gotten here, about half a cup of fresh parsley, freshly chopped parsley. And put that in now that's going to add a lovely flavor to it as well. The hot stock will cook the pasty as well. Wow, that looks really delicious now. Smells amazing to one side. And then the way and then all we need to do now is take a ball and some of the tortellini with some of the stock and into a serving bowl just like this.

Got here some parmesan cheese. I'm just going to great some of the parmesan over the top. He's also use pecorino as well. Done map. And there we have our tortellini in Baroda. Beautiful, beautiful, beautiful dish.

This is really lovely river that will pop out and for me my palm ram excuse me rotary router clock when you mountable I can probably lovely lovely dish really simple, very quick. Takes about 15 to 20 minutes start to finish and a really really great dish for like a midweek meal. Come home from work. Kids are hungry, um, put a pot of stock on two and a half liters and maybe the chicken cube a couple of cubes.

Pull out your tortellini from the freezer, pop it in some frozen mixed rage. 10 minutes later, beautiful, beautiful meal and you don't have to use tortellini you could use ravioli, as well or any other kind of small filled path. stuff works really really well. And there's this is easily going to serve about four people and you're probably going to have enough for leftovers to take to work the next day. So you're really lovely.
