Okay, now that you have learned all the ins and outs of cold stabilization through chilling, don't you really wish you didn't have to? Well, in this section, I'm going to talk about alternatives to chill-proofing, which is what we've been talking about through some room-temperature alternatives. I'm going to talk about two of them, and I think they're pretty exciting. The first one is called electrodialysis, and it's a big boy technology, so mostly suited to large wineries with permanent installations or medium-sized wineries that can make use of a mobile service affectionately known as S*T*A*R*S. I forget what it stands for, and it was developed by an outfit called Eurodia in Aix-en-Provence in France, based on Japanese membrane technology.
