And it was a good decade after that before we figured out that ultrafiltration is really quite useful in phenolic management. And we really have Richard Carey, who was a professor at Fresno State at that time, to thank for figuring this out. So what can you do with an ultrafilter? Well, a whole lot of things. You can harvest tannin from any variety to balance high-value varieties like Merlot and Cabernet. So we actually take tannin from Pinot Noir, press wine from sparkling wine production, concentrate it down, and then sell it to the Virginia Merlot producers because they make very elegant Merlots but they don't have enough tannin. So we're actually using Pinot Noir tannin to boost the body of Virginia Merlot, for example. Then another thing we can do, ultrafiltration also gives us the power to maximize the yield and the quality of press fractions and to use all of the fractions of that press wine for different uses, sort of like the pork producers in Wisconsin used to say...
