Okay, now we're going to talk about Vineyard Enology. Now, this is going to be largely a repeat of the last section, but I'm going to go into more detail here. And so you're going to see a lot of repetition. Sorry about that. But I think this is a complex subject and a lot of this bears repeating. I want to put a little more flesh on those bones. So here we go. Do you remember this slide? It's about how we go to winemaker Heaven, which is a harmonious, integrated, age-worthy wine. And how do we keep from going to Hell? Which is dry, dirty, veggie, oaky, falling apart wines. And the stages of the process, we start with what I call a healthy Cycle Two. And now I'm going to explain what the heck I mean by that. And as you recall, if that doesn't go well, then there's really nothing we can do to save the wine.
