Now, next, let's talk about how there is an enormous amount of misinformation out there about sulfite-free wines and about SO2 itself. A lot of horseshit on both sides. And I just selected two or three pieces of information that are almost universally believed and are completely untrue. So the first one I picked out was, "Even if no sulfur dioxide is added to wine, fermenting yeast will produce SO2 from the naturally occurring inorganic sulfates in all grape juices.
