Now we are launching off into Spoilage and Its Treatment. As an opening salvo, I want to talk about preventatives for oxidation and oxidative microbiology. And so let's examine Headspace Management. I'm going to explode some myths here and give you some advice about how to do this properly. Everybody knows that you shouldn't have any headspace in a tank or certainly in a barrel and that we need to keep those wines topped up. But it isn't always possible. We have a variety of strategies to deal with this. including variable headspace tanks. Which I hate.
They just don't work. But anyway, whether we have a V.T. or just a regular tank and we've got some headspace in it just because our volumes didn't work out perfectly, we're going to have to put some inert gas in there.
