We've got to get the wine down into the correct temperature range and clarify it, and it turns out that the polymerization of the tannins actually aids in clarification.So that's where Phase One is. Its purpose is to stabilize the colorThen we get our ML and we add our S02. Phase Two, as you can see, happens at a lower rate.And then we get into our barrel and then we come out and we do harmonization if necessary.
