I introduced this analysis way back in Part Three, as part of the section on vinification. So if it all sounds familiar, it is. However, now that you have a greater understanding of phenolics, enological oxygen, and the value of macromolecular structure, I'm revisiting the concepts here in an enhanced form, now that you're in a better position to grasp the details of the methodologies that I am exploring here. Now before we launch off into red winemaking, I want to go over my thoughts on parsing white winemaking into sort of four directions of the compass so you can head off in one direction.
