Sulfides and their Treatment

In this section, we're going to talk about sulfide defects. Ha! Now, I just want to let you know that this is going to be the standard view that I was taught at UC Davis and I used to think that these sulfur compounds were defects, now I actually worry about wines that don't make a little sulfide once in a while. And so it's a much more complex issue. We don't always want to just do a search and destroy on sulfides and they aren't as problematic as I used to think they were (ha!) so that's one preamble. Another is that the language that we use for sulfides is quite antiquated, but I'll fill you in as we go along here. All right. So what we're going to do, I'm going to name five compounds and they will have structures that I'll draw out for you, chemical formulas if you like, and we'll talk about what is the aroma that we're talking about and how sensitive is the human nose to these compounds.
